Our Collection

Winemaking Technology: Crafted in Qvevri according to the traditional Kakhetian method. The grape mass, including a portion of the stems, was placed in Qvevri for natural fermentation. Following fermentation, the wine remained on the skins (maceration) and partial stems for 2 months. It was then transferred to stainless steel tanks for 18 months for natural clarification and stabilization before bottling. Aroma: Distinct varietal characteristics of Saperavi blend seamlessly with notes of ripe red fruits and berries. Dominant aromas include ripe cornelian cherry, cherry, and blueberry.

It was then transferred to stainless steel tanks for 12 months for natural clarification and stabilization before bottling. Aroma: Distinctive aromas of yellow stone fruits—apricot, quince, wild plum, and peach—complemented by notes of yellow apple and white flowers. Palate: Soft and harmonious with pleasant acidity. The palate echoes the stone fruit notes of apricot, wild plum, and peach.
The Craft
Late September
Harvesting begins in late September, at the peak of perfection when sugars and phenolic maturity reach an ideal balance. We employ a selective, hand-picking method at dawn to preserve the fruit's natural coolness and pristine quality.
Traditional Kakhetian Method
Faithfully following the traditional Kakhetian method, the juice is placed in Qvevri along with the skins for natural fermentation. White wines age for 5-6 months, gaining a unique body, structure, and the authentic character inherent to natural winemaking.
Minimum One Year
After the Qvevri stage, the wine undergoes a peaceful aging process in stainless steel for at least one year. Minimal intervention and natural stabilization allow us to produce a "living" wine that fully expresses the character of the soil and the vine.
